Hello again guys. Sorry, another question here. I have been trying to investigate this idea of baby squid (or small quid perhaps, since "puntillas" -yum- are even smaller) with ?? These, as far as I can tell, could be those kind of crunchy, often fried, shredded, unidentifiable vegetables that look a little like a nest that you often get as a garnish in certain dishes, or perhaps crispy potatoes. Or perhaps I am missing something. The word "entre" inclines me to think that these are crsipy disks of something, but I am not sure.
Any ideas?

Hi again, Kate: I'm faily certain that the text refers to some kind of crisps (pity they don't go into more detail about the ingredients), but I'm sure your familiar bu cheese, apple or any number of ingredients used to make crispy "crujientes". Here's a link with an example of cheese crisps:
Rape al aroma de albahaca con crujientes


Categoria: Pescados y mariscos
Tipo de comida: Española
Número de porciones: 4
Tiempo de preparación: 45 minutos

Ingredientes:

1 - de cola de rape de un kilo
2 - de tomates maduros
10gramos de queso parmesano rallado
Para la salsa:
10gramos de aceite
5gramos de parmesano rallado
5gramos de piñones
1 diente de ajo
Albahaca


Poner los tomates en agua hirviendo un minuto, pelarlos, sacarles las pepitas y cortarlos en dados.


En una bandeja de horno con papel vegetal poner el queso rallado formando redondas como si fueran galletas grandes.



Ponerlo al horno y gratinarlo hasta que coja un ligero color dorado.



El rape tiene que estar sin espina, formando dos lomos.



Saltearlo en una sartén con aceite y mantequilla.



Dejarlo enfriar un poco y cortarlo a medallones.



Para hacer la salsa, mezclar todos los ingredientes en el minipimer.



Montar el plato untando los medallones de rape con la salsa y poniendo al lado los dados de tomate y los crujientes de queso.

Kate, there are heaps of English pages that use the word 'calamaretti', and even more with 'calamari', probably because many people are turned off by the word 'squid'. No ideas about 'crujientes'.

"chipirón" y "calamar" son lo mismo, hay varios enlaces que así lo reconocen. Te adjunto primero uno de los que lo así menciona:

I eat these all the time, with a bit of lemon. This is what I'd say.

Yeah. That´s what I thought at first. I am addicted to battered, crispy puntillas and chipirones...Yum! But I´m wondering about this "entre crujientes". Am I reading this wrong, perhaps?
Man, that picture just makes me want summer to come around so I can sit on the beach eating espetas de sardinas and puntillas all day! Lots of lemon...Yum...

crispy baby squid with lemon and black olive sauce

pil-pil is both a style of cooking and also a sauce that is formed by the natural juice of the fish and other ingredients. There are references of both in the list of recipies you can find in www.canales.elcomerciodigital.com./gastronomia. The link below refers only to this particular meaning.

Kate, honestly I ventured the translation ignoring the 'entre' thing because I understand that crujiente is either an adjective meaning crunchy or crispy, or is something made in that way. The term entre for me means "between" and here it doesn't make any sense.
