To tie fat around lean meats or fowl to keep them from drying out during roasting. The fat bastes the meat while it cooks, keeping it moist and adding flavor. The fat is removed a few minutes before the meat is finished.

barding When meat is wrapped in strips of fat while it cooks, the practice is called barding. Barding helps to keep meat moist while it cooks, and also imparts flavor. A related practice, larding, involves inserting pure fat into a cut of meat with the assistance of special tools. Whether barding or larding, the result is a rich, flavorful cut of meat which is also moist and tender.

For such terms calques is usually used. I met "бардировать" however it's not common. More generally is 'готовить в полосках сала или бекона' (cooking in bacon). For example, barded shrips is 'креветки в беконе'
