I am looking for a well-established term that would express the relationship between the number of animals slaughtered during a period of time (usually one year) and the total number of animals in the corresponding herd during the same period, expressed as a percentage. Stated as a formula, it would be:

_______________________________ x 100
total number of animals in herd
In Portuguese this is called "taxa de desfrute", or "enjoyment" rate of a herd, and it is a common measure of herd productivity. What is the technical term for this in English, if any? Does "yield rate" convey the idea? I have also come accross the term "outcome rate", but it is not very convincing, IMO.

Statistical analyses (Appendix A) of change in commercial beef production (Figure 2) shows that the change in production is largely due to changes in carcass weight (Figure 3) and extraction rate (Figure 4) (cattle and calf slaughter divided by total inventory).

: close for pigs. sow productivity = pigs weaned per sow per year, but you need to take account of post weaning mortality. Like many productivity measures it relates to the number of breeding animals only.

This is your equation, but it doesn't look like the term is anywhere near well established. It seems to refer to Africa mostly, and to herds of wild animals as well as domestic ones. You may also find it as off take, takeoff or take off rate.

Gross offtake
At the herd or flock level, the total voluntary disposal of animals by sale, slaughter, exchange and/or giving is known as gross offtake. It is an absolute measure which, for a given time period (t), is defined as:
Gross offtake in period (t) = sum of sales + slaughters + exchanges + gifts during period (t)
The measure thus includes disposals for commercial and non-commercial purposes. It can be calculated at the individual herd/flock level or aggregated (summed) for an area as a whole (e.g. region, district, nation). When aggregated, gifts and exchanges between producers within treated as transfers which cancel out. They are therefore excluded from the equation. Strictly speaking, all exchanges and gifts to producers outside the area should be included. However, they are usually extremely cliff cult to measure and are, therefore, commonly ignored.

lambing/calving percentage; percentage survival to sale
Where we are finishing stock for slaughter or onselling them to other farmers as stores,this is the main productivity measure we use. Or you can use 'percentage survival to sale'.They both relate to the total number of female breeding stock mated though, not to the whole flock/herd (which includes immature female animals).
