To protect them from the grease when they had to make adjustments under the bonnet (or hood - USA), or crawl under the car, when they would probably use a blanket to lie on.
I'm only guessing when I say 'white' would have been considered smarter, and even I don't remember that far back...

I think this refers to the coat, usually white, known as a duster that was worn over clothing to protect from blowback from the engine while driving (no windshields on early vehicles) and while working under the hood.
